Wholemeal Pancakes with Berry Compote

Steps

1. In a bowl, mix wholemeal flour, baking powder, and brown sugar. 2. In another bowl, whisk the egg with milk and vegetable oil. 3. Combine wet and dry ingredients, stirring gently until just mixed. 4. Heat a non-stick pan over medium heat and lightly oil it. 5. Pour batter to form small pancakes and cook for 2-3 minutes until bubbles appear, then flip and cook for another 2 minutes. 6. For the berry compote, heat berries with honey and lemon juice in a small saucepan over low heat until soft and syrupy (about 5 minutes). 7. Serve pancakes stacked with warm berry compote spooned over the top.
