Steps
1. Cook the spaghetti according to package instructions in salted boiling water until al dente.
2. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
3. Add the chopped anchovies to the skillet, stirring until they dissolve into the oil.
4. In a bowl, whisk together the egg yolk and grated Parmesan cheese until smooth.
5. Once the spaghetti is cooked, reserve a cup of pasta water and drain the rest.
6. Quickly add the hot spaghetti to the skillet with the anchovy mixture, tossing to combine.
7. Remove from heat and mix in the egg and cheese mixture, adding reserved pasta water gradually to create a creamy sauce.
8. Season with salt and pepper to taste, and garnish with fresh parsley before serving.
