
Steps
- Cook the spaghetti according to package instructions in salted boiling water until al dente.
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the chopped anchovies to the skillet, stirring until they dissolve into the oil.
- In a bowl, whisk together the egg yolk and grated Parmesan cheese until smooth.
- Once the spaghetti is cooked, reserve a cup of pasta water and drain the rest.
- Quickly add the hot spaghetti to the skillet with the anchovy mixture, tossing to combine.
- Remove from heat and mix in the egg and cheese mixture, adding reserved pasta water gradually to create a creamy sauce.
- Season with salt and pepper to taste, and garnish with fresh parsley before serving.
