Steps

1. Preheat the oven to 375°F (190°C). 2. In a bowl, combine the diced apple, breadcrumbs, cheddar cheese, parsley, thyme, salt, and pepper. 3. Carefully cut a slit in each pork chop to create a pocket for the stuffing. 4. Stuff each pork chop with the apple mixture, pressing it gently to ensure it stays inside. 5. Season the outside of the pork chops with salt and pepper. 6. Heat the olive oil in an oven-safe skillet over medium-high heat. 7. Sear the pork chops on both sides until browned, about 2-3 minutes per side. 8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C). 9. Remove the pork chops from the oven and let them rest for a few minutes before serving.
