Steps
1. Using a spiralizer or a vegetable peeler, create zucchini noodles and set aside.
2. In a skillet, heat the olive oil over medium heat. Add the onions and sauté until translucent.
3. Add the garlic and mushrooms, cooking until the mushrooms are tender and lightly browned.
4. Stir in the smoked paprika, salt, and pepper, cooking for an additional minute.
5. Add the zucchini noodles to the skillet and toss to combine, cooking for about 2-3 minutes until just tender.
6. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
