Steps
1. Heat the oil in a skillet over medium heat.
2. Add the onions and carrots and sauté for 3 minutes.
3. Add chicken and sauté for 3 more minutes, season with salt and pepper.
4. Add diced avocado and sauté for one more minute, stirring often.
5. Pour in soy sauce, stir everything together and cook until heated through.
6. Serve hot in a bowl.
