Steps
1. Toast the bread slice until golden and crisp.
2. While the bread is toasting, bring a small pot of water to a gentle simmer for poaching the egg.
3. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt, pepper, and a squeeze of lemon juice if desired.
4. Spread the butter evenly over the warm toast.
5. Spread the mashed avocado over the buttered toast.
6. Place the smoked fish evenly on top of the avocado.
7. Crack the egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes until the white is set but the yolk remains runny.
8. Using a slotted spoon, carefully lift the poached egg and place it on top of the smoked fish.
9. Season the egg with a little salt and pepper.
10. Garnish with fresh herbs if using, and serve immediately.
