Healthy Asian Egg Fried Rice Breakfast

Steps

1. Heat olive oil in a non-stick pan over medium heat. 2. Add grated ginger and sauté for 30 seconds until fragrant. 3. Add diced carrots and frozen peas; cook for 3-4 minutes until tender. 4. Push vegetables to one side of the pan, crack eggs into the other side and scramble until just set. 5. Add cooked brown rice to the pan, mixing all ingredients together. 6. Drizzle soy sauce and sesame oil over the mixture; stir well to combine and heat through. 7. Season with salt and pepper to taste. 8. Garnish with chopped green onions and serve warm.
