Steps
1. Preheat your waffle iron and lightly grease it.
2. In a bowl, whisk together eggs, flour, milk, baking powder, and salt until smooth.
3. Pour half the batter into the waffle iron and cook until golden and crisp. Repeat for the second waffle.
4. While waffles cook, warm the corned beef and sauerkraut in a small pan.
5. Spread Russian dressing on one waffle.
6. Layer corned beef, sauerkraut, and Swiss cheese on top.
7. Top with the second waffle to form a sandwich.
8. Optionally, place the sandwich back in the waffle iron or a pan to melt the cheese slightly and warm through.
