Russian Beetroot Salad

A delicious and healthy beetroot salad from the Russian kitchen. Dairy-free and vegan.

Steps

  1. Peel the beetroot and grate it.
  2. Finely chop the onion.
  3. Cut the cucumber into small cubes.
  4. In a bowl, mix the grated beetroot, onion, cucumber, dill and parsley.
  5. Season with salt & pepper and mix together.
  6. Add the oil and honey or sweetener, mix all together.
  7. Serve the salad as it is, or with some bread or crackers.

  • 1 tsp fresh dill
  • 1 tsp parsley
  • Salt & freshly ground pepper to taste
