Steps
1. Heat olive oil in a small non-stick skillet over medium heat.
2. Add minced garlic, chopped onion, and diced bell pepper. Sauté for 3-4 minutes until softened.
3. In a bowl, beat the egg with soy sauce, salt, and pepper.
4. Pour the egg mixture over the sautéed vegetables in the skillet.
5. Reduce heat to low, cover, and cook for 5-6 minutes until the egg is set.
6. Using a spatula, carefully loosen the edges and slide the frittata onto a plate.
7. Garnish with fresh basil or parsley if desired, and serve warm.
