
Steps
- In a bowl, whisk the eggs with a pinch of salt and pepper until well combined.
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the chopped spinach to the skillet and sauté for 1-2 minutes until wilted.
- Pour the whisked eggs over the spinach and let it cook undisturbed for about 2 minutes.
- Sprinkle the crumbled feta cheese on one half of the omelette.
- Carefully fold the other half over the feta and cook for another minute until the eggs are fully set.
- Slide the omelette onto a plate and garnish with fresh basil leaves if desired.
