Steps
1. Preheat the oven to 375°F (190°C).
2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
3. Add chopped spinach and cook until wilted. Remove from heat and mix in feta cheese, oregano, salt, and pepper.
4. Carefully cut a pocket in the chicken breast and stuff it with the spinach and feta mixture.
5. Season the outside of the chicken breast with salt, pepper, and lemon juice.
6. Place the stuffed chicken in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
7. Let it rest for a few minutes before slicing and serving.
