Steps
1. In a small pan, melt butter over medium heat. Add apple slices and sprinkle with cinnamon. Sauté for 5-7 minutes until apples are tender and slightly caramelized. Set aside.
2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. In another bowl, beat the egg with milk and vanilla extract.
4. Pour wet ingredients into dry ingredients and gently mix until just combined (batter should be slightly lumpy).
5. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
6. Pour batter (about 1/4 cup) onto the skillet for each pancake. Cook until bubbles form on top and edges look set, about 2-3 minutes.
7. Flip and cook for another 1-2 minutes until golden brown.
8. Stack pancakes on a plate, layering sautéed apples between each pancake.
9. Drizzle with maple syrup if desired and serve warm.
