Steps
1. In a small pan, heat olive oil over medium heat.
2. Add the rinsed black beans and season with salt and pepper. Cook for about 3-4 minutes, stirring occasionally, until warmed through.
3. Meanwhile, toast the slice of bread until golden brown.
4. In another small pan, fry the egg to your liking (sunny-side up or over-easy).
5. Once the beans are heated, remove from heat and stir in half of the shredded cheese until melted.
6. Assemble the dish by placing the cheesy beans on top of the toasted bread, then topping with the fried egg and the remaining cheese.
7. Serve hot with a side of brewed coffee and optional hot sauce if desired.
