Steps
1. Heat olive oil in a skillet over medium heat.
2. Add the sliced mushrooms and sauté for 4-5 minutes, until they start to brown.
3. Add the fresh spinach to the skillet and cook until wilted.
4. Create two wells in the mushroom and spinach mixture and crack the eggs into each well.
5. Season with salt and pepper to taste.
6. Cover the skillet and let the eggs cook for 3-4 minutes, or until the whites are set and the yolks are still slightly runny.
7. Serve hot and enjoy!
