Vegan Eggplant Parmesan

Steps: 1. Preheat oven to 400°F. 2. Cut the eggplant into thin slices and brush each slice with olive oil. 3. Place the slices on a sheet pan lined with parchment paper. 4. Top each slice with vegan mozzarella, Parmesan and tomato sauce. 5. Sprinkle herbs over the top. 6. Bake in oven for 15-20 minutes, or until eggplant is golden and cooked. 7. Enjoy!
