Mexican Bean Burrito

This tasty burrito packed with protein-rich beans and flavorful herbs and spices will make a quick and delicious meal!

Steps

1. Begin by heating the olive oil in a large skillet over medium heat. 2. Once the oil is hot, add in the diced onion and bell pepper. Cook the vegetables until they become soft, about 3 minutes. 3. Next, add in the black beans, chili powder, garlic powder, cumin, paprika, and salt. Stir to coat the vegetables and beans in the spices. 4. Cook for an additional 2 minutes, stirring occasionally. 5. Take the skillet off of the heat and add the chopped cilantro. Give it a quick stir. 6. Place one of the tortillas on a large plate. Spread half of the bean mixture in the center of the tortilla. Sprinkle 1/4 cup of cheese over the filling. 7. Fold in the sides of the tortilla and roll it up. Place the burrito seam-side down and repeat the process with the second tortilla. 8. Cut the burrito in half and serve.
