Vegetarian Fajita Bowl

This vegetarian fajita bowl is a great way to enjoy all the Mexican flavors without the meat. The dish is served with an array of vegetables, legumes and spices.

Steps

1. Heat the olive oil in a skillet over medium-high heat. 2. Add the peppers, onion, cumin and cayenne pepper, and season with salt and pepper. 3. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes. 4. Meanwhile, warm the tortillas in the oven or microwave. 5. To assemble the bowl, place the cooked black beans in the bottom of each bowl, then top with the fajita vegetables. 6. Top with the avocado, salsa, cilantro, sour cream and lime juice. 7. Serve with the warm tortillas.
