Steps
1. Preheat a large skillet on medium heat with 1 teaspoon of olive oil.
2. Add the shrimp and cook it for 2 minutes per side or until you get a nice golden color.
3. Remove the shrimp from the pan and set aside.
4. In a bowl, mix the diced red pepper, diced avocado, remaining olive oil, lime juice, salt and pepper.
5. Add the cooked shrimp, crumbled feta cheese, toasted pumpkin seed and fresh cilantro.
6. Serve immediately and enjoy!
