Steps
1. Heat olive oil in a skillet over medium-high heat.
2. Add onion and bell pepper and cook until softened, about 5 minutes.
3. Add garlic and sauté for 1 minute.
4. Add corn kernels, cumin, chili powder, smoked paprika, garlic powder, salt, and pepper. Stir to combine and cook for 3-4 minutes until corn is cooked through.
5. Taste and adjust seasoning if needed.
6. Garnish with cilantro and serve.
