Mushroom Stroganoff

A vegan twist on the classic Stroganoff bringing delicious, earthy mushrooms to the mix

Steps

1. Heat the olive oil in a saucepan over medium heat. Add the mushrooms, onion, garlic, onion powder, salt, and pepper. Cook for 5 minutes, stirring occasionally. 2. Pour in the vegetable broth and cook for a few more minutes until it evaporates. 3. Add the sour cream, cream cheese, and parsley. Stir and cook for another 5 minutes, stirring frequently. 4. Serve the mushroom stroganoff over cooked spaghetti. Enjoy!
