
Steps
- Season the chicken breast with salt and pepper.
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken breast and cook until browned on both sides.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced onion, minced garlic, carrot, and red bell pepper.
- Cook until the vegetables are slightly softened.
- Pour the beer into the skillet and bring to a simmer.
- Return the chicken to the skillet and cover with the beer sauce.
- Reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the chicken is cooked through.
- Serve the beer-braised chicken with the roasted vegetables.
