Beer-Braised Chicken

Steps

1. Season the chicken breast with salt and pepper. 2. In a large skillet, heat the olive oil over medium heat. 3. Add the chicken breast and cook until browned on both sides. 4. Remove the chicken from the skillet and set aside. 5. In the same skillet, add the sliced onion, minced garlic, carrot, and red bell pepper. 6. Cook until the vegetables are slightly softened. 7. Pour the beer into the skillet and bring to a simmer. 8. Return the chicken to the skillet and cover with the beer sauce. 9. Reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the chicken is cooked through. 10. Serve the beer-braised chicken with the roasted vegetables.
