Blueberry Banana Oat Cake

Steps

1. Preheat the oven to 350°F (175°C) and lightly grease a small baking dish or line a ramekin with parchment paper. 2. In a mixing bowl, mash the ripe banana until smooth. 3. Add the egg white, Greek yogurt, and vanilla extract to the mashed banana and stir until well combined. 4. In a separate bowl, combine oat flour, baking powder, cinnamon, and salt. 5. Gradually add the dry ingredients to the wet ingredients and stir until a smooth batter forms. 6. Gently fold in the frozen blueberries. 7. If desired, mix in honey or maple syrup for extra sweetness. 8. Pour the batter into the prepared baking dish or ramekin. 9. Bake for 20-25 minutes, or until the cake is set and a toothpick inserted in the center comes out clean. 10. Allow to cool slightly before serving. Enjoy warm or at room temperature.
