Steps
1. Preheat your oven to 350°F (175°C) and grease a small ramekin or baking dish.
2. In a mixing bowl, mash the ripe banana until smooth.
3. Add the grated carrots, melted butter, honey (if using), and brewed coffee to the mashed banana and mix well.
4. In another bowl, combine whole wheat flour, baking powder, and cinnamon.
5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
6. Pour the batter into the prepared ramekin and smooth the top.
7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
8. Let it cool for a few minutes before serving. If desired, top with a dollop of cream cheese.
