Steps
1. Preheat the oven to 350°F (175°C). Line a square baking dish with parchment paper.
2. In a microwave-safe bowl, melt the butter. Set aside to cool slightly.
3. In a separate bowl, beat the eggs until well combined. Add the melted butter, almond flour, erythritol, vanilla extract, and salt. Mix until all the ingredients are fully incorporated.
4. If desired, fold in the chopped walnuts into the batter.
5. Pour the batter into the prepared baking dish and spread it evenly.
6. Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
7. Allow the blondies to cool completely in the baking dish before cutting into squares.
