Steps
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the rolled oats, almond flour, baking soda, and salt.
3. In another bowl, mix together the maple syrup, melted coconut oil, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and stir until well combined.
5. Fold in the dairy-free chocolate chips.
6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
