Steps
1. Cook the rice noodles according to package instructions, then drain and set aside.
2. In a pan, heat the oil over medium heat and add the julienned carrots. Sauté for about 3-4 minutes until they are tender.
3. Push the carrots to one side of the pan and crack the egg into the other side, scrambling it until cooked through.
4. Add the cooked rice noodles to the pan, then sprinkle with cheese and paprika. Stir everything together until the cheese is melted and the noodles are coated.
5. Season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
