
Steps
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix the Dijon mustard, honey, olive oil, salt, and pepper until well combined.
- Rub the mixture all over the chicken thigh, ensuring it’s coated evenly.
- Place the chicken thigh in a baking dish and roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
- Let it rest for a few minutes before serving. Garnish with fresh thyme if desired.
