Steps
1. Preheat a grill pan or skillet over medium heat.
2. In a small bowl, mix olive oil, soy sauce, garlic powder, salt, and pepper. Coat the chicken breast with this marinade.
3. Grill the chicken for 4-5 minutes on each side until fully cooked. Let it rest for 2 minutes, then slice into thin strips.
4. In another bowl, mix Greek yogurt with lemon juice, a pinch of salt, and pepper to make the dressing.
5. Lay out the lettuce leaves and fill them with grilled chicken strips, bell pepper, and cucumber.
6. Drizzle the yogurt dressing over the filling.
7. Garnish with fresh cilantro or parsley.
8. Fold the lettuce leaves like wraps and serve immediately.
