Creamy Paneer and Sweet Corn Soup

Steps

1. Heat oil or butter in a saucepan over medium heat. 2. Add chopped onions, garlic, ginger, and green chili; sauté until onions are translucent. 3. Add sweet corn kernels and cook for 2 minutes. 4. Pour in vegetable broth and bring to a boil. 5. Reduce heat and simmer for 5 minutes until corn is tender. 6. Add paneer cubes and milk or cream; simmer for 3 minutes. 7. Use an immersion blender to partially blend the soup, leaving some texture. 8. Season with salt and black pepper to taste. 9. Garnish with fresh coriander leaves before serving.
