Steps
1. Cook the pasta according to package instructions, adding the frozen peas during the last 2 minutes.
2. Finely chop the garlic.
3. Heat olive oil in a pan over medium heat and sauté the garlic for 2 minutes until fragrant.
4. In a blender or food processor, combine the cooked peas, lemon juice and zest, mint leaves, salt, pepper, plant-based cream, and sautéed garlic. Blend until smooth.
5. Drain the pasta and peas, reserving some pasta water.
6. Mix the pea cream sauce into the pasta, adding reserved pasta water as needed to achieve a creamy consistency.
7. Adjust seasoning and serve warm.
