Steps
1. In a pan, sauté the onion until translucent. Add the minced chicken and cook until browned.
2. Add the tomato, red bell pepper, cumin powder, paprika, salt, and pepper. Cook for another 5 minutes.
3. Preheat a separate pan. Place one pita bread on the pan.
4. Spread half of the chicken mixture on one side of the pita bread.
5. Sprinkle half of the shredded mozzarella cheese on top of the chicken mixture.
6. Fold the pita bread in half and press gently. Cook until golden brown.
7. Repeat the same process for the second quesadilla.
8. Cut the quesadillas into wedges and serve hot.
