Steps
1. Heat vegetable oil in a pan over medium heat.
2. Add cumin seeds and let them sizzle for a few seconds.
3. Add minced garlic and chopped onions, sauté until onions are translucent.
4. Add turmeric, coriander, red chili powder, and salt. Mix well.
5. Add diced potatoes and stir to coat them in the spices.
6. Pour in enough water to cover the potatoes, cover, and simmer until the potatoes are tender.
7. Garnish with fresh cilantro and serve hot with rice or bread.
