Steps

1. Peel and dice the potato into small cubes. Slice the onion. 2. Heat olive oil in a skillet over medium heat. 3. Add the diced potatoes and cook until golden and crispy. 4. Add the sliced onions and cook until caramelized. 5. Pour soy sauce over the potatoes and onions, toss to coat. 6. In a separate pan, fry or poach the eggs. 7.
