Steps
1. Heat the vegetable oil in a pan over medium-high heat.
2. Add the minced ginger and sauté for about 30 seconds until fragrant.
3. Add the beef slices and stir-fry until browned, about 3-4 minutes.
4. Add the fish pieces and cook for another 2 minutes until they are opaque.
5. Stir in the diced tomatoes and soy sauce, cooking until the tomatoes soften, about 2 minutes.
6. In a separate bowl, beat the egg and season with salt and pepper.
7. Push the beef and fish mixture to one side of the pan, and pour the beaten egg into the other side, scrambling it until fully cooked.
8. Mix everything together, adjust seasoning if needed, and serve hot, garnished with chopped green onions if desired.
