Preheat your oven to 375°F (190°C). In a small bowl, mix olive oil, thyme, rosemary, salt, and pepper. Rub this mixture all over the turkey breast. Place the turkey breast in a baking dish and roast for about 25-30 minutes until cooked through and juices run clear. While the turkey is roasting, peel and chop the potatoes. Boil them in salted water for 15 minutes or until fork-tender. Drain the potatoes and add minced garlic, butter, and milk. Mash until smooth and creamy.
