Greek-Style Egg and Cheese Sandwich

This Greek-inspired sandwich combines creamy feta cheese, fluffy scrambled eggs, and a zesty mustard spread, all nestled between slices of warm pita bread. It's a delicious and fulfilling meal perfect for breakfast or lunch.

Steps

1. In a bowl, whisk the eggs with salt and pepper. 2. Heat olive oil in a non-stick skillet over medium heat. 3. Pour in the eggs and scramble gently until cooked through. 4. Stir in the crumbled feta cheese until just melted. 5. Spread mustard on one side of each pita slice. 6. Place the scrambled egg and feta mixture on one slice of pita. 7. Add fresh spinach and sliced tomatoes if desired. 8. Top with the second slice of pita and press down gently. 9. Grill the sandwich in the skillet for 2-3 minutes on each side until golden and heated through. 10. Slice and serve hot.
