Steps
1. Preheat a grill pan over medium heat.
2. Season the chicken breast with salt and pepper and brush with half the olive oil.
3. Grill chicken for about 5-6 minutes per side, or until fully cooked. Remove and let rest.
4. Brush peach slices with remaining olive oil and grill for 2 minutes per side until caramelized.
5. In a small bowl, whisk honey with lime juice.
6. Slice the chicken into thin strips.
7. In a salad bowl, combine mixed greens, grilled peaches, and chicken.
8. Drizzle with honey-lime dressing and toss gently.
9. Top with crumbled feta cheese if desired and serve immediately.
