This comforting pasta bake combines the earthy flavors of cauliflower, potatoes, sweet potatoes, and vibrant tomatoes, all topped with melted cheese. Perfect for a wholesome meal that’s both filling and nutritious.

Steps

1. Preheat the oven to 180°C (350°F). 2. Cook the pasta according to package instructions until al dente, then drain and set aside. 3. In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent. 4. Add the cauliflower, potato, and sweet potato, cooking for about 5-7 minutes until slightly tender. 5. Stir in the chopped tomato and green paprika, and season with salt and pepper. Cook for another 3-4 minutes. 6. In a large bowl, combine the cooked pasta and the vegetable mixture. Mix well. 7. Transfer the mixture to a baking dish, top with cheese if using, and bake for 20 minutes or until golden and bubbly. 8. Garnish with fresh basil before serving.
