1. Preheat the oven to 180°C (350°F). 2. Cook the pasta according to package instructions until al dente, then drain. 3. In a skillet, heat olive oil over medium heat, add onion and garlic, and sauté until translucent. 4. Add cauliflower, sweet potato, and potato; cook for about 5-7 minutes until slightly tender. 5. Stir in the green paprika and canned tomatoes; season with salt, pepper, and Italian herbs. Cook for another 5 minutes. 6. In a large mixing bowl, combine the cooked pasta with the vegetable mixture. 7. Transfer to a baking dish, top with cheese, and bake for 20-25 minutes or until the cheese is bubbly and golden. 8. Let it cool slightly before serving.
