Cheesy Mushroom Pasta Bake

Steps

1. Preheat your oven to 375°F (190°C). 2. Cook the pasta according to package instructions until al dente. Drain and set aside. 3. In a large skillet, heat olive oil over medium heat. Add grated carrot and sliced mushrooms. Saute until they are cooked and any liquid has evaporated. 4. Add the cooked pasta to the skillet and mix well with the vegetables. 5. Season with salt and pepper to taste. 6. Transfer the mixture to a baking dish. Spread the mashed potato evenly over the top. 7. Sprinkle the grated cheese on top of the mashed potato. 8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. 9. Serve hot and enjoy!
