Steps
1. Preheat your oven to 400°F (200°C).
2. Wash and peel the potato, then slice it into thin rounds.
3. In a mixing bowl, combine the mayonnaise, mustard, minced garlic, and half of the shredded cheese. Season with salt and pepper.
4. Toss the potato slices in the olive oil, then layer them in a greased baking dish.
5. Spread the creamy cheese mixture evenly over the potato layers.
6. Top with the remaining shredded cheese.
7. Cover the dish with aluminum foil and bake for 30 minutes.
8. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
9. Let it cool for a few minutes, garnish with fresh parsley if desired, and serve hot.
