Steps
1. Preheat your oven to 400°F (200°C).
2. In a bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper.
3. Rub the herb mixture onto the lamb chops, coating them evenly.
4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned.
5. Transfer the chops to the oven and roast for 8-10 minutes for medium-rare.
6. Meanwhile, peel and chop the potato, then boil in salted water until tender (about 15 minutes).
7. Drain the potatoes and mash them with butter, milk, and roasted garlic if using.
8. Serve the lamb chops on a plate alongside the garlic mashed potatoes, garnished with chopped parsley.
