Steps
1. Preheat oven to 375F.
2. In a large bowl, toss together chicken, garlic, onion, potato, herbs, oil, salt and pepper.
3. Transfer to a baking sheet, spread evenly in a single layer.
4. Roast in oven for 25-30 minutes, or until chicken is cooked through.
5. In the last 5 minutes of cooking, add cooked rice to baking sheet and stir to combine with chicken and vegetables.
6. Serve warm.
