
Steps
- Heat the oil and butter in a large skillet over low-medium heat.
- Add the broccoli, carrots, and garam masala and cook, stirring frequently, until the vegetables are tender, about 6-7 minutes.
- Crack the eggs into the skillet and stir everything together.
- Cook until the eggs are no longer runny, about 4-5 minutes.
- Sprinkle with cumin and season with salt and pepper to taste.
- Serve over plain basmati rice.
