Indian Vegetarian Potato Curry

This easy Indian Vegetarian Potato Curry is the perfect weeknight dinner! Fresh ginger and onions give it a really aromatic flavour. Serve it over steamed white rice, and you have a filling and tasty meal!

Steps

1. Heat the vegetable oil in a medium saucepan over medium heat. 2. Add the onion and ginger, and fry until the onion is tender. 3. Add the potatoes, and fry for an additional two minutes. 4. Add the turmeric and soy sauce, and fry for an additional two minutes. 5. Add 1 cup of water, bring to a simmer, and then reduce heat and let simmer for 15 minutes, until the potatoes are tender. 6. In a separate saucepan, bring 1 cup of water to a boil. Add the white rice, and reduce to low heat. Cover the saucepan, and let the rice simmer for 10 minutes. 7. Serve the curry over steamed white rice.
