Steps
1. Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it with a fork and season with salt, pepper, and optional garlic powder.
2. In a small skillet, melt the butter over medium heat.
3. Crack the eggs into the skillet and cook them sunny-side up or to your desired doneness. Season with salt and pepper.
4. While the eggs are cooking, spread the mashed avocado on a plate.
5. Once the eggs are done, place them on top of the avocado spread.
6. Sprinkle with fresh chives and paprika if desired.
