Steps
1. Marinate the chicken in buttermilk for at least 30 minutes.
2. In a bowl, mix flour, cornstarch, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Dredge the marinated chicken in this mixture.
3. Heat oil in a pan over medium heat and fry the chicken until golden and cooked through, about 6-8 minutes. Drain on paper towels.
4. For the waffles, in a bowl, combine flour, baking powder, baking soda, and kimchi. In another bowl, whisk milk, egg, and melted butter. Combine wet and dry ingredients until just mixed.
5. Preheat a waffle maker and cook the batter according to the manufacturer's instructions.
6. For the gochujang caramel, combine sugar and water in a small saucepan over medium heat. Stir until sugar dissolves, then let it simmer until it turns golden. Remove from heat and stir in gochujang and butter until smooth.
7. Serve the fried chicken on top of the kimchi waffles and drizzle with gochujang caramel.
