Steps
1. Rinse quinoa under cold water and drain.
2. In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
3. Fluff quinoa with a fork and let it cool slightly.
4. In a bowl, combine olives, cherry tomatoes, cucumber, feta cheese, olive oil, lemon juice, salt, and pepper.
5. Add the quinoa to the vegetable mixture and toss gently to combine.
6. Garnish with fresh parsley before serving.
