Steps
1. Rinse the quinoa under cold water.
2. In a small pot, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
3. In a skillet, heat olive oil over medium heat. Add the diced red bell pepper and sauté for 3-4 minutes until softened.
4. Stir in the black beans, corn, chili powder, salt, and pepper. Cook for another 3-5 minutes until heated through.
5. Once the quinoa is cooked, fluff it with a fork and divide it into a bowl.
6. Top the quinoa with the black bean mixture, avocado slices, and garnish with fresh cilantro.
7. Serve warm and enjoy!
